Swap the butter for Cold Pressed Coconut Oil in this simple cookie dough and you get the same crisp, golden bake with a subtle natural coconut aroma.

Ingredients

Dry Ingredients

  • 1½ cups whole wheat or all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup jaggery powder or brown sugar

Wet Ingredients

  • ½ cup Sutr Cold Pressed Coconut Oil, melted
  • 1 egg (or 1 tablespoon flaxseed meal + 3 tablespoons water for an egg-free version)
  • ½ teaspoon vanilla extract

Instructions

    Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.

    Whisk together the flour, baking soda and salt in a bowl.

    In a separate bowl, whisk the melted coconut oil and jaggery powder until well combined, then mix in the egg and vanilla extract.

    Fold the dry ingredients into the wet mixture until just combined -- do not overmix.

    Scoop tablespoon-sized portions onto the tray, spaced well apart, and flatten each slightly.

    Bake for 10-12 minutes until the edges turn golden. Cool on the tray for 5 minutes before transferring to a wire rack.
