A fast weeknight stir fry that leans on the sharp, pungent flavour of Kachi Ghani Mustard Oil for an authentic tadka -- crisp vegetables, bold spice, ready in under half an hour.

Ingredients

For the Tempering (Tadka)

  • 2 tablespoons Sutr Cold Pressed Mustard Oil
  • 1 teaspoon mustard seeds
  • ½ teaspoon cumin seeds
  • 8-10 curry leaves
  • 2 dried red chillies

For the Stir Fry

  • 3-4 cups mixed vegetables (capsicum, carrot, beans, cabbage), sliced thin
  • 2 cloves garlic, finely chopped
  • 1-inch piece ginger, finely chopped
  • ¼ teaspoon turmeric powder
  • Salt to taste
  • 1 teaspoon lemon juice

Instructions

    Heat the mustard oil in a wok or kadhai until it just starts to shimmer -- this brings out its full, sharp aroma.

    Add the mustard seeds and let them sputter, then add the cumin seeds, curry leaves and dried red chillies. Fry for 15-20 seconds.

    Add the garlic and ginger, and saute for a minute until fragrant.

    Add the mixed vegetables and turmeric powder. Toss on high heat for 5-7 minutes, stirring often, until the vegetables are just tender but still crisp.

    Season with salt, squeeze over the lemon juice, and give it one final toss.

    Serve hot, straight from the wok, with steamed rice or rotis.
